Ekpang Nkukwo is one of the traditional delicacies of the Efiks and Ibibios. Made with cocoyam and little wateryam, this meal is relished by many and contains the basic classes of food, the flavour and taste are heavenly mouth-watering.The popularity has even gone beyond the Ibibios and Efiks, so many people from other parts of the nation have come to
enjoy this mouth-watering dish.The meal, however, is not an everyday meal. It is so special and it is reserved for majorly special occasions.Usually wrapped in vegetables which are so rich in vitamins, there certainly cannot be Ekpang without periwinkles. Of course, periwinkles are low in fat and calories but contain protein, omega-3 fatty acid and water.Cocoyam is very rich in vitamin B6 and magnesium, which help control high blood pressure and protect the heart. It is very rich in dietary fibre too, and good for proper glucose metabolism. Popular amongst diabetics in Africa, may be due to its content of loose carbohydrate in form of starch.
